It is also delicious when used in the making of custard, giving a delicious and different twist to the flavour. Recipe
Makes 18 muffins
Ingredients
300 grams all purpose flour
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg
1 teaspoon ground cloves
2 teaspoons baking powder
1 teaspoon baking soda
1 tin canned pumpkin 15oz
2 eggs
120 grams golden sugar (light brown)
2 tablespoons sunflower oil
1 teaspoon vanilla extract
Method
First pre heat your oven to 350°F or 175°C
Then in a medium to large bowl add the flour, cinnamon, nutmeg, cloves, baking powder and the baking soda. Thoroughly mix together.
In another bowl add the eggs and beat them. Once beaten add the pumpkin, sugar, sunflower oil, and the vanilla extract and mix together.
Now take the blended flour and add gently to the mixture and keep mixing until it is all nicely mixed together.Try not to over mix.
Take 18 non stick muffin cups and pour the mixture equally into each. Place in the oven and bake for 25-30 minutes or until cooked. Remove from the oven and allow to cool for 5 minutes, then remove from the tray to a cooling rack and leave to continue to cool.
