Serves 4 people
4 large chicken breasts skinned
80 ml extra virgin olive oil
1 teaspoon chilli powder
1 teaspoon ground coriander seeds
1 teaspoon dried oregano
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1 tablespoon fresh chopped cilantro
Juice of one lime squeezed
1 teaspoon salt
Take a large mixing bowl and add all the ingredients except the chicken and give it a good stir. Now take 3-4 tablespoons of the marinade and put to one side in a small bowl.
Place the chicken breasts into the large bowl and give each piece a good rub making sure each piece is covered by the marinade. Cover the bowl with some cling film and place in the refrigerator for a minimum of 30 minutes but 2 hours is best!
The chicken can either be grilled or cooked using a skillet on a medium to high heat. Cook for about 7 minutes each side or until cooked. Use the extra marinade to brush onto the chicken once you have turned it.
Serve with rice and salad or steamed fresh vegetables.
