Mexican Dry Rub Guide

Mexican Dry Rub is a fantastic blend of herbs and spices. It adds delicious flavours to chicken, fish, pork and other meats. This rub is really effective used as a simple dry rub, but it can also be mixed with some lime juice to make a fantastic marinade.

Some very common herbs and spices that are used to make this dry rub are : cayenne pepper, chilli powder, dried oregano, smoked paprika or paprika, ground cumin and black pepper. To finish this blend off there are a few other ingredients which we will look at in the recipe.

Making this dry rub at home is simple to do. Chances are, after taking a look in the spice rack in your kitchen, you will probably have all, or nearly all of the herbs and spices required. If you don't have some, or any, of these herbs and spices then they too are available online.

Mexican Dry Rub Cooking Tips

Cooking with this dry rub is awesome as it can be used with just about anything. Simply take whichever chicken, poultry, meat or fish you are going to cook, and give it a good rub with this spice rub. Leave for 2 hours before cooking. A great tip, if you are cooking poultry or chicken, is to try to buy it with the skin on. Rubbing these spices under the skin really adds superb flavour.

You could even add this rub to stir fry vegetables or try adding this spice rub to potato wedges before roasting in the oven.

I am going to use pork loin steaks in my recipe, because this meat is nice and tender and really lends itself to these great flavours. It is also very easy to cook and goes well with fresh sautéed vegetables.

Pork Loin with Mexican Dry Rub


1 tablespoon onion powder

1 tablespoon garlic powder

1 tablespoon dried oregano

2 teaspoons powdered cayenne pepper

2 teaspoons sea salt

1 teaspoon powdered cumin

1 teaspoon smoked paprika

4 pork loin steaks


First take the meat out of the fridge and leave for 15 minutes so as to reach room temperature.

Take a mixing bowl, add all the seasonings and give it a good mix together. Place the meat into the mixing bowl and rub the seasonings into the meat.

Now you can cook either by grilling or broiling which ever you prefer.
