Fajita Seasonings are used in Tex Mex cooking. This seasoning blend is made up from several herbs and spices to produce this very spicy and delicious seasoning. A fajita is usually grilled meat served with onions and bell peppers cooked with this mix of herbs and spices. Then simply served on a warm corn or flour tortilla.
Making your own fajita seasoning is also possible. There are many different recipes that can be tried, each having its own mix of herbs and spices. Often, but not always, the herbs and spices found in this blend are: chilli powder, cayenne pepper powder, ground paprika, ground cumin, Mexican oregano, garlic powder, onion powder and ground black pepper.
You can buy fajita seasoning online. There are several brands each with their own blend of herbs and spices. You can also buy this seasoning as a sauce. This can be used to marinade your meats if you choose,or simply use it to complement your food.
This seasoning is great to cook with and it is delicious with beef, chicken, pork, shrimp and lamb as well as onion and bell pepper. It is usually served with a variety of side dishes which are normally guacamole, sour cream, salsa and cheese. This can vary according to where you are eating your fajitas. If cooking at home you can also experiment.
Below is a picture of my homemade guacamole, which has delicious sharpness from the lime juice and with a little heat from the chopped up chilli in it.
I like to make fajitas for the family using most of the spices talked about above. Most of these herbs and spices are already in the cupboard at home. Take a look at the recipe below and give it a try.
Fajita spice blend
1 tablespoon chilli powder
2 teaspoons ground cumin
1 teaspoon ground cayenne pepper
1 teaspoon ground paprika
1 teaspoon garlic powder
1 teaspoon ground sea salt
1 teaspoon ground black pepper
Take a medium mixing bowl and add all the ingredients together. Using a whisk thoroughly blend together.
Serves 4-5 people
4 large skinned chicken breasts, cut into small strips
1 red bell pepper cut into strips
1 yellow bell pepper cut into strips
1 large onion sliced thinly
4 tablespoons extra virgin olive oil
2 tablespoons of fresh chopped cilantro
Fresh ground pepper
First take a bowl and add the chicken and 2/3 of the seasoning mix and using your hand mix it in making sure the meat is covered.
Put a large frying pan or skillet on a medium to high heat and add 3 tablespoons of the olive oil. Once hot add the chicken. Cook until the chicken is browned and remove into the bowl. Then add the peppers and onion with the remaining 1/3 of the fajita spice mix. Cook for around 6-8 minutes and then return the chicken giving it a good stir in, then cook until the peppers and onion are cooked or about 10 minutes, then add the cilantro.
Season with the salt and pepper to taste if required.
Take the tortillas and place them on a plate. Pop them into the microwave for 1 minute or until warmed through. Or you can heat in the oven wrapped in tin foil 200°C for 10 minutes.
To serve take the warmed tortillas and load them evenly with the chicken fajita mixture.
Don't forget the salsa, guacamole and the sour cream!
