Chicken Dry Rub Guide 

Chicken Dry Rub is a delicious way to get some great flavours into chicken. It is a blend of herbs and spices that can vary in flavours depending on the Dry Rub recipe you follow when making your own at home. If buying a  pre-mixed rub there are several to choose from.

It is easy to make a Chicken Dry Rub at home and you will probably already have the herbs and spices needed in your kitchen. Typical herbs and spices used are;  ground paprika, ground cayenne pepper, rosemary, sage, thyme, garlic powder, onion powder, black pepper and salt. This can vary according to different recipes and tastes.

Pre mixed Dry Rubs are also available online and, as mentioned already, there a several different brands each with their own style. Of course, if you are making your own dry rub at home and do not have some or any ingredients, they are also available online.

Chicken Dry Rub Cooking Tips

Make sure you use the chicken thighs, legs or breast with the skin on.This will help to keep the meat nice and moist when cooked. Another great tip is to loosen the chicken skin with your fingers before you apply the rub. You can then rub the mixture into the meat under the skin. Now replace the skin onto the meat as it will protect it from drying out when cooking.

Always make sure the chicken is cooked but not over cooked. To do this after about 30 minutes of cooking, place a knife into a piece of chicken and if the juices are clear that is a good indication that it is cooked. Then take a fork and pull the meat if it comes apart easily then it is ready to be removed from the oven.

Another great tip is to use a meat thermometer to check when the chicken is cooked.  These are the temperatures you are looking for. Dark meat takes a little longer to cook so you want the inside of the meat to be 180°F or 85°C. White meat should be 160°F or 75°C

Try the Dry Rub recipe below and then follow the recipe to apply it to the chicken and cook. I like to serve it with fries or pasta and a nice fresh salad or fresh vegetables.

Baked Chicken with Dry Rub


Serves 4-6 people


2 tablespoons salt

2 tablespoons garlic powder

2 tablespoons onion powder

2 teaspoons ground paprika

2 teaspoons dried thyme

2 teaspoons black pepper

1 teaspoon ground cayenne pepper.

12 chicken thighs, legs or mixed,with skin on


Pre heat the oven to 390°F or 200°C

Mix all these herbs and spices thoroughly together in a bowl.

Line a baking tray with foil. Apply the ‘rub’ all over the chicken pieces making sure you lift the skin to apply to the meat under the skin.  Now place the prepared chicken pieces onto the baking tray.

Place the tray into the oven on the middle shelf and bake for 40-50 minutes or until cooked. Do not forget to check the chicken after 30 minutes cooking!

Once cooked serve with your choice of vegetables, salad, potatoes or pasta.
