Blackened Seasoning Mix - what is it?
Blackened Seasoning Mix commonly has a smoky, spicy flavour. It is usually a blend of herbs and spices and may include, thyme, paprika, cayenne pepper, garlic powder, black pepper, onion powder, oregano and basil. But it does not have to be a mix of these exact herbs and spices. There is no particular recipe that can be called the exact one either
Blackened food made with these herbs and spices is popular around the world and adds awesome flavour to foods. It is often used with steak, chicken, pork, shrimp, fish and even vegetables! It is a great way of getting some serious flavour to your food.
Making this seasoning is not so difficult, but of course, you will need all the various herbs and spices to be available for the different recipes. Once you have these to hand, it is just a case of adding all the ingredients and mixing it all together. In professional kitchens pre made bought blackening seasoning is commonly used. It saves time and money and also there are some great pre mixed blackening seasonings on the market.
3 tablespoons ground paprika
2 tablespoons dried thyme
2 tablespoons garlic powder
2 tablespoons onion powder
2 teaspoons cayenne pepper
2 teaspoon black pepper
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
Take a small to medium bowl, add all the ingredients and thoroughly mix together.
This seasoning is readily available online. It often comes in a convenient bottle or jar, which usually fits into the spice rack at home. But beware! Cajun seasoning is often mistaken for blackening seasoning and this is simply not so.
Cooking with this seasoning is not as difficult as you might think. Most of the meats or fish that you would cook using this method are cooked using a heavy frying pan or skillet along with 1-2 tablespoons of oil or butter in the pan and heated until just starting to smoke.
To actually apply the seasoning is easy. You need to cover or dip your meat, fish, prawns or vegetables in or into molten butter. Then simply take your blackening seasoning and give a generous coating. Then, to finally cook your food, place it into the hot pan. When it has cooked half way through flip it over to cook the other side. Try not to turn your food too often when cooking.
You will know when you have cooked this right through as you should end up with a delicious, dark looking, crispy and spicy outer. The meat or fish should be nicely cooked until juicy and tender.
Once you have cooked your blackened meat or fish, serve it either with a nice pasta or fresh vegetables, or a lovely fresh salad with a tasty dressing. This produces a delicious healthy, quick and simple meal.
Serves 4-6 people
4 large chicken breasts
50 grams melted butter
3-4 tablespoons blackening seasoning
small knob of butter
Cut each chicken breast into 3 equal strips diagonally. Take the chicken goujons and dip them into the melted butter covering them completely. Remove them to a plate and sprinkle the blackened seasoning mix over them making sure they have a generous covering. Turn the chicken goujons and repeat.
Take a large skillet and heat on a high temperature until it starts to smoke, then add the knob of butter. Now add your chicken and leave to sear. Once cooked, turn and cook the other side. Try to resist turning them too many times.
Once they have a slightly blackened colour and a crispy outer they are cooked. Cut one in half to make sure they are 100% cooked.
Serve with some pasta and salad. Yummy!
